Gluten Free Tombstone Treats


I love Halloween. It’s a time of the year filled with child-like creativity and you’re allowed to pretend to be whatever you want. I’ve always felt inspired by this time of the year with witches, zombies, and all the different types of monsters that I was super excited to partake in this event. The gluten free tombstone treats I’m sharing with y’all today not only taste great, but you can also let your creativity fly as you decorate these yummy treats.

These tombstone treats are a thriller and kids would have tons of fun decorating these. The fudgy, soft gluten free chocolate brownies are just the right serving size. Top them with some fluffy buttercream frosting and crunchy crumbled cookies, you’ll be fighting for your life to resist eating these! I like to round out the graveyard decorations with some spooky candy skeletons and tombstones.

Ingredients

For the brownies
½ cup canola oil
1 cup Dixie Crystals sugar
1 ½ tsp gluten free vanilla extract
2 large eggs
¼ cup sweet rice flour
2 tbsp coconut flour
2 tbsp tapioca starch
¼ tsp guar gum
¼ tsp baking powder
¼ tsp salt
1/3 cup high quality cocoa powder
For the tombstones
1 bag black melting candy
1 bag white melting candy
1 bag bright green melting candy
(skeleton and tombstone candy molds)
For the topping
¼ cup softened butter
2 cups Dixie Crystals confectioners’ sugar
¾ tsp gluten free vanilla
3 tbsp milk
¼ cup high quality cocoa powder
Gluten free chocolate sandwich cookies

Instructions

For the brownies
1.Preheat the oven to 350F. Grease the bottom of mini loaf pans (8 total)
2.Mix the oil, sugar, eggs, and vanilla until well blended.
3.In a medium bowl, stir the flours, starch, gum, powder, salt, and cocoa powder together. Add to the egg mix and stir til well combined.
4.Pour into the prepared pan, and bake for 18 minutes.
5.Remove the brownies from the pan once they are cool.
For the decorations
1.Melt the white and black candies in a decorating bag. Mix the candies together until they are grey, and pour into the gravestone molds. Refrigerate until chilled then pop out of the molds.
2.Melt the green candies in a decorating bags. Fill the skeleton molds and refrigerate. Once chilled, pop out of the molds.
For the topping
1.In a large bowl, cream the butter.
2.Slowly whisk in the sugar until well combined. Whisk in the milk and cocoa powder. Transfer to a decorating bag and top the brownies with the frosting.
3.Remove the cream filling from the cookies and pulverize to crumbs with a food processor. Sprinkle on top of the frosted brownies.
4.Place the tombstones and skeleton bones into the brownies for decoration.
