Gluten Free Cinnamon Rolls

Ingredients
Dough
1 package active dry yeast
1 cup warm milk
1/2 cup granulated sugar
1/3 cup softened unsalted butter
2 eggs
1 cup sweet rice flour
1 cup white rice flour
1/2 cup potato starch
1/2 cup tapioca starch
1/2 cup almond flour
1/2 cup coconut flour
2 tsp xanthan gum
Filling
1 cup brown sugar packed
3 tbsp cinnamon
1/3 cup butter softened
Cream cheese icing
6 tbsp butter
1 1/2 cups powdered sugar
2 oz cream cheese
1/2 tsp vanilla extract
Instructions
Dough
1. Pour the yeast into the warm milk. Let it sit for about 5 minutes.
2. Add sugar, butter, eggs, flours, starches, and gum to the bowl of a mixer with a dough hook and mix well.
3. Pour the milk mixture in the bowl, mix well until well incorporated.
4. Place dough into an oiled bowl, cover and let rise in a warm place for about 1 hour.
5. Roll the dough out on a lightly floured surface, until it is a 1/4 inch thick rectangle.
6. Preheat oven to 350 F degrees. Grease a 9×13 inch baking pan.
Filling
1. Combine the butter, brown sugar and cinnamon in a bowl.
2. Spread the mixture evenly over the surface of the dough.
3. Roll the dough down to the bottom edge. Cut the roll into 1 inch slices.
4. Place the cut rolls in the prepared pan. Cover them with a damp towel. Let them rise again for another 30 minutes.
5. Bake for 20 minutes or until light golden brown.
Icing
1. While the rolls are baking make the icing by mixing all ingredients and beat well with an electric mixer until fluffy.
2. Spread the icing generously on the rolls.
