Cake Pops – Easy as 1, 2, 3!

I made some gluten free chocolate cake pops for Halloween this year! These cake pops are great finger foods for any Halloween party, and kids will love the cute decorations! I love making cake pops (see my Pokemon cake balls from last year), so I wanted to make some for Halloween this year! Cake pops may sounds super crazy and intense, but pretty much there’s four main steps. Make the cake, make the frosting, roll into balls, and decorate. For my cake pops I like to use a moist chocolate cake recipe and a cream cheese frosting. Putting the two together creates this great consistency that feels like dough and is easy to form into balls. And the best part is once you dunk the balls in the candy, it’ll keep the cake moist!

What you’ll need…

You can do all of this without any crazy expensive tools, but if you want to spend a little money, I recommend getting a Wilton candy melter. Its great for melting chocolate and candy for these types of treats! I also like to go out and buy little treat bags and ties to individually wrap each pop for presentation. Furthermore, you can go to your local craft store to buy some mason jars and glass marbles as I did. This is a fun and creative way to present your cake pops! Add a small bowl with some water and dry ice, then you’ve got yourself a foggy, spooky environment perfect for Halloween!

In order to make these gluten free, you have to be careful with what type of candy you purchase. Do your research of what gluten free candies are out there, and if there are any available at stores near you (otherwise Amazon will solve all your problems)!

  • 2 cups sugar
  • 3/4 cup sweet rice flour
  • 1/2 cup gluten free oat flour
  • 1/4 cup tapioca starch
  • 1/4 cup potato starch
  • 1 tsp guar gum
  • 1 1/2 tsp salt
  • 3/4 cup cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 2 eggs
  • 1 cup milk
  • 1/2 cup coconut oil
  • 1 1/2 tsp vanilla
  • 1 cup boiling water
  • 4 oz butter, room temp
  • 4 oz cream cheese, room temp
  • 2 cup powdered sugar
  • gluten free candy melts


  1. Preheat the oven to 350F.
  2. Grease a 13x9 baking pan
  3. Stir all the dry ingredients together.
  4. On low, blend in the eggs, milk, oil, and vanilla just until well combined.
  5. Stir in the boiling water until everything is well combined, then transfer to the pan and bake for 35 minutes. Let the cake cool completely.
  6. In a large bowl, whip the butter, cheese, and powdered sugar together. Blend the cake into the frosting by hand until the cake feels like dough.
  7. Roll the cake into balls, and insert cake pop sticks halfway through. Refrigerate for 1 hour.
  8. Melt the candy, then dunk the cake pops into the candy, and let cool completely. Decorate the pops as desired, and enjoy!
