Happy Sunday! I’m hosting a #SundaySupper and I’m super excited for the various recipes that are well suited for summertime potlucks. Memorial Day is the marker as the main kick-off holiday for SUMMER. For today’s Sunday Supper, I made a grilled corn salad requires minimal cooking and is pretty easy to toss together. I love the flavor that grilled corn gets, with all the sweetness and texture that comes with grilling the corn. I like bringing sides and desserts to summer potlucks that can survive under the heat, especially since I live in Virginia and today we’re supposed to be in the 80s while I’m having my cookout. (not the super stylish era, but the really muggy hot 80 degree temps).

Gluten Free Grilled Corn Salad


  • 1/2 lb baby potatoes
  • 4 corn cobs
  • 1 heirloom tomato
  • 1/2 yellow onion
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp pepper


  1. Remove the husk and hairs from the corn. Grill over indirect heat for 30 minutes, then place over direct heat, turning every 2 minutes, just until grill marks appear.
  2. Boil the potatoes for about 10 minutes, or until tender.
  3. Chop the onion and tomato, and remove the kernels from the cob.
  4. Toss all the ingredients together, and you're ready to serve!
