Happy Friday! It’s time for another Geek Food Friday and today we’re making Gluten Free Lemon Tiramisu inspired by Game of Thrones! I felt like this would be the perfect week to do a Game of Thrones post since the season finale is this weekend! The real question when I was prepping for this week was what I would make. My favorite house is definitely the Starks, but a lot of their story is filled with tragedy and isn’t the easiest to translate to food. As I was thinking though, I thought of the character Sansa, one of the strong female characters that has been a focus this season. In the books they mention her love for lemon cakes, so I wanted to make gluten free lemon tiramisu.

The Recipe!

Gluten Free Lemon Tiramisu

Gluten Free Lemon Tiramisu

Ingredients

  • Cake Ingredients:
  • 1 box Betty Crocker Gluten Free Yellow Cake Mix
  • 1 stick room temperature butter
  • 2 tsp gluten free vanilla extract
  • 2/3 cup orange juice
  • 3 large eggs
  • Lemon Curd Ingredients:
  • 1 1/2 cup granulated sugar
  • zest of 3 lemons
  • 1 stick room temperature butter
  • 4 large eggs
  • 1/2 cup fresh lemon juice
  • strawberries, for garnish

Instructions

  1. Preheat the oven to 350F. Grease a shallow rectangular pan.
  2. In a large bowl, mix the cake mix, butter, and extract together. Once combined, add the juice and eggs and stir until a batter has formed.
  3. Transfer the batter to the pan and bake for 18 min or until an inserted toothpick comes out clean.
  4. Remove the cake from the oven and let cool completely.
  5. In a small bowl, mix the sugar and lemon zest together with your hands. Set aside.
  6. In a large bowl, cream the butter and lemon sugar together until the butter is light and fluffy..
  7. Add the eggs one at a time to the butter, and stir until well combined.
  8. Fold in the lemon juice, and transfer the curd to a saucepan. Cook over medium low heat for 10 minutes, stirring constantly.
  9. Transfer the curd to the refrigerator for an hour to cool.
  10. Cut the cake into circles using a cookie cutter and place one layer in a ramekin. Top with some of the lemon curd. Add another cake layer and top with more curd. Refrigerate for 30 minutes before serving.
  11. For garnish, slice the strawberries thin and fan on top of the tiramisu.
